Fun lunches

I found these cute diner baskets at a kitchen outlet and forgot I had them.

I decided to do up some chicken nuggets and fries. Who needs fast food joints?

It was a bit hit. The kids thought it was awesome. They didn’t want to throw the liners away. I told them I had more stashed. They were so relieved.

These nuggets are Foster Farms Orange Chicken without the sauce.

I used the sauce on mine, though! I mix in some sweet chili sauce to cut the syrupyness. Is that a word? It is, now.

Then this morning, I saw some fun muffin lunches on Pinterest and thought I could make something like that with things I already have on hand…

Here are the ingredients.

1. fridge biscuits!

Deli Virginia ham and garlic herb chicken – seriously Prima Della meats from Wal-Mart deli are THE BEST, people…Mini pepperoni, bacon bits, my very own shredded cheese blend (cheddar, mozz, and parm), BBQ sauce (we usually make our own, but somehow I had this for the kids for something – they like it sweet!)…I also had some homemade pizza sauce in the fridge(not pictured).

Assemble mini pizzas: place biscuits in greased muffin tin. spoon a bit of sauce in and top with meat of choice.

I made little pepperoni pizzas on the left. I made BBQ bacon chicken next. Last, I did ham and cheese with no sauce, though I think a honey mustard or Ranch would be really good on those. I made a cheese pizza out of that last little lonely guy on the corner.

Top with cheese. Not too much or they won’t bake. I know. I want more cheese too. Bake at 400 for about 10-12 minutes. Depends on your oven, the size of your muffin tray, altitude, and all that.

While those little darlings are in the oven, prep some fruits and veggies. Isn’t that little red dip tray precious? I found that at Target years ago. It’s a red picnic tablecloth pattern on the side. All my dishes are red and blue. We’re a patriotic family,

I did have a little trouble getting them to come out. Slide a little knife around the edges. The cheese makes them stick a bit.

Place those melty little darlings on a pretty tray. I did it by type so my kids wouldn’t freak out. If I had mixed them all up to look prettier, they would have been upset. sigh

Then step away quickly so you don’t get mauled by four hungry kids.

I should have doubled the recipe. Those little bacon chicken BBQ are good, y’all.

I think the hubs would like some little Buffalo chicken ones. I want to try some Caesar chicken ones. I could do some teri shrimp ones too! Oh, the possibilities!

I plan to really go crazy with these little muffin melts this next month! Stay tuned.

Muffin Tin Monday Lunch

We haven’t had a muffin tin meal in ages.

cheese tortellini with parmesan and olive oil, apple slices (Fuji and Red Delicious – ya know, to please the masses), baby carrots, cheese bread sticks

We had a rather large breakfast, so the kids didn’t want a heavy lunch with lots of meat, and I was fine with that. We love pasta and cheese ‘round here.

How we roll when Dad’s away

I set out a little buffet for dinner and we watched a movie. We had various meats and cheeses and veggies and fruit with pasta and leftover homemade pizza. It was quite awesome. The kids loved the little cocktail forks!

Muffin Tin Monday

Alex was super excited to get a muffin tin for lunch. He pointed to each cup and named it and told me it was all “hot.”

We had leftovers: garlic couscous, buttered corn, steamed broccoli, sautéed cubed pork, and cheese (of course, everyone likes a different cheese: string, Babybel, Kraft singles). Yummy last night for dinner and today for lunch!

Muffins!

Pumpkin streusel muffins from Williams Sonoma The Cookbook for Kids.
streusel topping: Mix in small bowl and set aside
3 T brown sugar
2 T AP flour
1/4 t each nutmeg, cinnamon
1/4 c chopped walnuts
1 T butter
Batter: 350 degrees, 20 minutes
Dry: 1 1/2 c AP flour
1 t baking soda
1/2 t baking powder
1/2 t salt
1/2 t each cinnamon, cloves, nutmeg
Wet: 1 c pumpkin
1 1/2 c sugar
1/2 c canola oil
2 large eggs, room temp
1/2 t vanilla
Preheat oven. Prepare muffin tin, cups, liners, etc. Mix dry in one bowl. Mix wet in another bowl. Combine. Put in muffin tin, cups, liners, etc. and sprinkle on streusel topping. Bake at 350 for 20. Rest for 5 if you can stand it! Kid and neighbor approved!

Broccoli Potato Soup
1 crock pot of homemade chicken stock (or 1 of those good yellow box kind)
4 potatoes, peeled and cubed
1 head of broccoli, chopped (florets and stalk)
salt and pepper
garlic powder
parsley
Simmer until potatoes and broccoli stalks are tender. Use a stick blender or put through a blender or food processor. My kids like it thick and a bit chunky still. If you like it smooth, puree it all. If you like it thinner, you can always add a little half and half or more broth. Serve with crumbled bacon and shredded cheese. Nummy!

Muffin Tin Meal

 

Good bye Summer…

I made a muffin tin lunch (yeah, I know it’s Tuesday…we missed it yesterday!)

I used Hawaiian plates with silicone shaped muffin cups…

We had ham, cheese, Red Delicious and Granny Smith apple slices, carrot and celery sticks, Ritz crackers, mixed berries, and peanut butter dip. There were frilly toothpicks to top it all off.

I still can’t get over how well they eat when it’s all pretty in little cups. The girls loved the celery with peanut butter. Alex loved the apples and peanut butter. The girls didn’t really eat their berries and Alex mooshed his on the placemat, but we’re working on trying new things. Winking smile

Muffin Tin Monday

Alex rather likes Muffin Tin Monday.

He has hot dogs, Cheezits, carrots, watermelon, cheese, and fruit gummies. Rather red!

Elizabeth chose the muffin tins and most of the fillers. The girls have apple slices with their cheese. Katie has radishes with her carrots and Liz has bell peppers with hers. Liz chose a yogurt instead of gummies. Pretty healthy girls! Tori picked out little pinwheel toothpicks to pick up the food. Love it!

Muffin Tin Monday

I do believe it is The Bubba’s first Muffin Tin Monday!
We did muffin tin snacks today.
Alex had peanuts, Goldfish, M&Ms, star marshmallows, mini Oreos…
The girls had flower muffin tins…peanuts and M&Ms, Goldfish, mini Chips Ahoy, Wheat Thins, string cheese, star marshmallows.

Muffin Tin Monday, Sorta

Short and sweet today and only one picture…

They’re in compartments, but not exactly muffin tins. We have leftover Easter ham, Doritos, cheese, and apples. We just love ham and bought a humongous one so we’ll have lots of leftovers!
